If your main purpose is farming, start in Cantha to hit level 20 ASAP. I got to level 20 the night I made my character. Do every quest in Shing Jea (When you get to the secondary profession quests, take all 8 of those and do the quests after those, too), and you SHOULD be level 19 or 20 once you hit Kaineng.
As for profession, I'd personally choose Monk, but you'll get to the point where you'll want both. So start with Monk, then make an Elementalist in a few months/a year.

E/A or E/Me
Mo/x cannot farm as many places as E/x's can farm, and most places that Mo/x's can farm are way overfarmed and thus plagued with crappy drop rates.

as you don't have proph you can't play 55hp or 600hp
so make an ele and you can do e/me uw farming and e/a sliver armor farming...

E/A sliver wouldn't work because Sliver is Factions only isn't it?
Anyway, I'd still go ele because you don't have Prophecies, but if you do I'd just make both.
EDIT: Best way to unlock skills? It's quickest to just buy them all, but cheapest to use balthazar faction. The depends on how good you are though, but you can always just do the zaishen challenge each day. If you have Prophecies you can do the skill quests aswell.

@ the above poster: He has factions he just doesnt have prophecies.
@ the OP: Elementalist all the way i believe they are a lot more versatile then the monks being able to Perma Obsidian Flesh and do good damage with sliver armor which actually gives you more drops, I believe.

With only factions, e/a is best.
Shadow form + nukes

since u dont got profecies, monk is kinda useless, cause u cannot get Essence bond, Balthazar Spirit, nor Shield of Jugdement or SS which are some skills needed for 55hp farming
-> Ele
